March is here and while it seems that winter still has an icy grasp, we can see spring right around the corner! We are very excited for warmer weather, fun events, spring wine an cheese releases and many other goodies that spring has to offer. We hope to share all of these delights with you in the coming months. EMMENTALER
The original “Swiss” cheese. This is a very mild Swiss that is classically used in fondue and also as a sandwich cheese. It is wonderful for melting. It has a sweet, nutty flavor perfect for Croque Monsieur.

TALEGGIO
Taleggio is a wonderful washed rind cow’s milk cheese from Lombardy, Italy. It has a soft (brie like) texture that has fresh, doughy, yeasty aromas, & a light tangy finish. Great for cooking in pasta/pizza dishes, or having slathered on a baguette with a big glass of Lafond Syrah (Also great with a Sangiovese, Pinot Noir, or even a Beaujolais)!!!

ISABELLA
Isabella is a traditional Dutch cow's milk gouda aged 20 months with a sweet, fruity, nutty flavor. The unique lactate crystals that form in the aging process gives the cheese a unique shade of gold, as well as, an intense caramelized or butterscotch flavor. Isabella is considered an interesting replacement to Parmesan. Enjoy this cheese with fruit and full flavored red wines.

2008 Leojami Viognier
Fresh, floral and vibrant viognier from Leojami, a new winery sourcing their fruit from the best vineyards in the Arroyo Seco Appellation. Winemaker Ben Spencer ferments in stainless steel and neutral oak barrels, producing a wine of wonderful acidity and crisp citrus flavors that is well balanced with a creamy full-bodies mouth feel. This is a perfect wine to pair with a variety of foods but we recommend enjoying a glass with some fresh goat’s milk chevre and crusty bread.

2007 Isola D'Oro Nerello Mascalese
A great new find for us! Indigenous Sicilian varietal, Nerello Mascalese grown in the jet-black volcanic soil that Sicily is famous for. Fermented 100% in traditional cement containers, it is pleasantly earthy and flowery, with hints of tobacco and notable tannin content. Flavors of dried black cherry and blackcurrant are matched with earthy spice and a silky texture. Enjoy this robust red wine with a nice aged sheep’s milk cheese and a few slices of procuitto!

We are very Excited to be involved again in the amazing 3rd Annual Pebble Beach Food and Wine, the most extravagant Epicurean event in the Country! The Cheese Shop will be highlighted at the Opening night Tasting and during the Saturday Grand Gala.
